Cap'n Jack's Mint Pesto

3 bunches of fresh mint

2 bunches of flat leaf parsley

Salt & Pepper to taste

2 oz. parmesan cheese

¼ cup toasted almonds

About 2 cups EVOO

1 oz. chopped garlic

Zest of ½ lemon

Juice of 2 lemons

¼ cup sugar

 

In blender, add everything but EVOO, S&P, and sugar

Blend slowly, and add EVOO while blender is ON

Add S & P to taste

If too oily tasting, add lemon juice.

If too acidic, add sugar.
