Slow Cooker Jamaican Beef

Slow Cooker Jamaican Beef

(8 - 10 hours on Low)  

2 - 3 lb. Browning Homestead Bottom Round Roast, cut into 4 – 6 large pieces (also good with London Broil)

Flour to coat roast pieces

3 Tbsp. butter

1 medium onion, peeled and cut into ¼ inch pieces

1 Tsp minced garlic

½ c. apple cider vinegar

14 oz. beef broth 1 tsp salt

½ Tsp. black pepper

½ Tsp ground cinnamon

½ Tsp ground nutmeg

½ Tsp ground cloves

2 Tsp Worcestershire sauce

½ Tsp cocoa powder  

Melt butter in large skillet on medium heat. Coat roast pieces with flour and brown on all sides in butter over medium to medium low heat (don’t let butter smoke). Remove browned roast pieces to bottom of medium* slow cooker. Cook chopped onion and garlic in remaining butter and browned bits of the meat, until onion begins to soften. Stir in apple cider vinegar, beef broth, salt, pepper, cinnamon, nutmeg, cloves, Worcestershire sauce and cocoa. Bring slowly to a low boil, remove from heat, then pour over beef pieces (liquid should mostly cover beef). Cover slow cooker.  

 

 

Set slow cooker at 160°F to 180°F. Low on most cookers will cook at 160° F. I start my recipe on High, and then turn to Low when I leave the house or after one hour, whichever comes first, and it's done after 8 hours.  

 

*Size the slow cooker so that the liquid mostly covers the beef.
