Lamb Loin Chops - June 11, 2014

We're happy to announce that we just got back the "coming soon" lamb cuts!

 

Those with pre-orders will be sent a private email. After pre-orders are filled, this is what we have in stock:

 

Half boneless legs (2)

Whole boneless shoulders (2). This is a new cut for us, customers requested it for grilling.

Kebabs (from lamb shoulder)

Loin chops

Rib chops

Ground lamb

Lamb shanks (including cross cut that were special ordered - there may be some of these available if the customer does not take them all).

If Memorial Day is also your unofficial start to summer and you’re planning on firing up the grill, Bill just picked up our beef and pork from Westerly Packing last night and will make another trip today to pick up the rest – so the freezers are full of our fresh Browning Homestead beef and pork (and we still have some lamb for the grill!)  Here's what we'll have in the traveling freezers at the S.K. A little something to try with your Browning Homestead Lamb!

 

CAP’N JACK’S ROSEMARY OIL for LAMB CHOPS

Rosemary Oil:

7 sprigs of Rosemary, crushed

Add to 5 cups olive oil

Put on stove on lowest heat for about an hour

Strain oil  

Browning Homestead Farm Lamb:

Grill lamb chops to mark (to put grill marks on the chops, not to cook)

Pull off grill and put in oven at 350°F with a coating of rosemary oil,

cook to desired temp

Serve with Mint Pesto (on the side of the plate for dipping, do not cover chops).  

 

CAP’N JACK’S MINT PESTO  

3 bunches of fresh mint

2 bunches of flat leaf parsley

Salt & Pepper to taste

2 oz. parmesan cheese

¼ cup toasted almonds

About 2 cups EVOO

1 oz. chopped garlic

Zest of ½ lemon

Juice of 2 lemons

¼ cup sugar  

In blender, add everything but EVOO, S&P, and sugar.  Blend slowly, and add EVOO while blender is ON. Add S & P to taste.

If too oily tasting, add lemon juice.

If too acidic, add sugar.  

 

This Mint Pesto would be a nice side for a leg of lamb too!

Loin chops April 2014 -2 

 

We have our lamb back! I have posted a photo of loin chops at the bottom of this email that we “taste tested” (sweet, tender, meaty, fabulous), so you can have a peek. We are very pleased with this lamb, the legs are big and meaty (whole, bone-in legs range from 5.5 to 8.5 pounds); even the shanks are big and meaty. Well, everything is meaty!!  I’m also happy to say that there is plenty of ground lamb!

 

Early pick-up available

We had originally planned to deliver the pre-orders at the April 12th and April 19th Saturday market, and will still do so. However, if you would like to pick up your pre-order tomorrow, April 5th, all you need to do is respond to this email and let me know you will pick up tomorrow.  

 

Pick up at side table

We will be filling pre-orders at the side table where we keep the Rhody Warm blankets. So if there’s a line, please go right to the side table and let us know you’re there for your pre-order!  

 

Also, we will have our Cooking Browning Homestead Lamb instruction sheets available, so be sure to pick one up!

Socks says Spring IS coming, March 20th!

 

This is a repeat of our March 7th email notice, for the benefit of those who signed up for email after March 7th and those who may have missed the March 7th notice. 

IF YOU HAVE ALREADY ORDERED BY EMAIL IN RESPONSE TO OUR MARCH 7TH NOTICE, THERE IS NO NEED TO REORDER - I PRINTED YOUR EMAIL ORDER AND SENT YOU A CONFIRMATION EMAIL. 

THERE IS ALSO NO NEED TO ORDER IN RESPONSE TO THIS EMAIL IF YOU FILLED OUT A PRE-ORDER FORM AT THE FARMER'S MARKET - I HAVE ALL OF THOSE NUMBERED AND ACCOUNTED FOR. 

 

We are now taking pre-orders for our lamb roast cuts - whole legs, half-legs, and rib roasts.  If there is  something else you would like (rib, loin or shoulder chops, shanks, or ground lamb) please let us know and we'll set that aside for you.  Delivery of Easter orders will be at the SK Farmers' market on April 12th and 19th, or at the farm by appointment.  (Easter is April 20th.) 

 

Each time we process lamb we quickly sell out of roasts and ground lamb, even though we have been raising more lambs each year.   Last Spring 100% of our legs of lamb were sold by pre-order.  We thank all of you for that, because it's your taste for lamb and your support of our farm that enables us to grow our flock and maintain the consistent quality of lamb that is our goal. 

 

If you would like lamb for roasting, please send an email or fill out a Pre-Order Form at the market. If you would like leg of lamb, please indicate whether you want whole or half, bone-in or boneless, and for a half leg, if you want the cap or shank.   The whole legs will probably be in the 5-7 pound range. Once we get the meat back from Westerly Packing, I'll have the specific weights and contact you with them. All orders will be filled on a first-ordered  -  first-served basis.  We will do our best to provide you with the cut and size you want.

 

If you have any questions please email anytime, or come by at the South Kingstown Indoor Market at the Peace Dale Mill Complex on Kingstown Road. We’re there every Saturday, 10 am to 2 pm.
