What a cool, dry summer we've had, we hope you have enjoyed yours. We are thankful for this week's warm, humid days and praying for rain to help our second cutting of hay grow. Our livestock is counting on us to put up plenty of winter feed!

Bill picked up our meat today at Noacks (the USDA inspected smoke house that smokes the meat we raise), as well as our lamb and pork this afternoon at Westerly Packing (the USDA inspected cutting floor we use for all of our cutting).  We have our Bacon and our Lamb Sausage back in stock, along with our Smoked Boneless Hams (very limited number), Smoked Ham Steaks, Kelly Dogs, KielbasaCountry Style Ribs, Spare Ribs, Ground Pork and Boston Butts (limited Boston Butts).

We hope you're all enjoying the Summer of 2014!  The pic above is of one of the twins that plays in the fields and woods, and sometimes right on the driveway.
 
Bill is on his way back from Noacks with our Bacon and All-beef Hotdogs as I type this. And with our beef and lamb that he picked up on Saturday afternoon, our almost empty freezers (Thank you!!) will be full again.  We'll be at the Tuesday market today from 2:00 - 6:00 p.m. at Marina Park.  We cannot take everything to the markets, so if there's something you would like us to include and set aside for you, please email us.
 

As usual we'll be at the URI market on Saturday, 8:30 am - Noon.   But this coming Sunday, August 10th, we'll be at the 3rd Annual Green Market Festival, 716 Moorsefield Road, SK - held on location of Landscape Creations and Farmers Daughter. Sorry we will miss the Fishermens Memorial Park market that morning, but we'll be back the next Sunday!

* Our hotdogs are nitrate/nitrite free, in a natural casing. Please note that the hotdogs contain hydrolyzed soy protein, which is part of the ‘hotdog spice’ mixture. Based on our research, if you are allergic to MSG you should avoid HSP. The hotdogs Noacks made without the spice containing HSP lacked any hotdog taste. Noacks is searching for a hotdog spice mix without HSP. Perhaps someone somewhere is working on this, but since the well-known brand Hebrew National™ has not found an alternative to the HSP in hotdog spice mix, we’re not expecting this to be coming soon.

Lamb Loin Chops - June 11, 2014

We're happy to announce that we just got back the "coming soon" lamb cuts!

 

Those with pre-orders will be sent a private email. After pre-orders are filled, this is what we have in stock:

 

Half boneless legs (2)

Whole boneless shoulders (2). This is a new cut for us, customers requested it for grilling.

If Memorial Day is also your unofficial start to summer and you’re planning on firing up the grill, Bill just picked up our beef and pork from Westerly Packing last night and will make another trip today to pick up the rest – so the freezers are full of our fresh Browning Homestead beef and pork (and we still have some lamb for the grill!)  Here's what we'll have in the traveling freezers at the S.K. A little something to try with your Browning Homestead Lamb!

 

CAP’N JACK’S ROSEMARY OIL for LAMB CHOPS

Rosemary Oil:

7 sprigs of Rosemary, crushed

Add to 5 cups olive oil

Put on stove on lowest heat for about an hour

Strain oil  

Browning Homestead Farm Lamb:

Grill lamb chops to mark (to put grill marks on the chops, not to cook)

Pull off grill and put in oven at 350°F with a coating of rosemary oil,

cook to desired temp

Serve with Mint Pesto (on the side of the plate for dipping, do not cover chops).  

 

CAP’N JACK’S MINT PESTO  

3 bunches of fresh mint

2 bunches of flat leaf parsley

Salt & Pepper to taste

2 oz. parmesan cheese

¼ cup toasted almonds

About 2 cups EVOO

1 oz. chopped garlic

Zest of ½ lemon

Juice of 2 lemons

¼ cup sugar  

In blender, add everything but EVOO, S&P, and sugar.  Blend slowly, and add EVOO while blender is ON. Add S & P to taste.

If too oily tasting, add lemon juice.

If too acidic, add sugar.  

 

This Mint Pesto would be a nice side for a leg of lamb too!
